When pondering on what to name my blog.... I thought & thought.... and the color yellow came to me!! A dear friend that has gone to be with the Lord (the color yellow that reminds US of her beautiful and bright smile) gave me the inspiration for the theme . In memory of a wonderful friend.

You Must Try This!

Easy Roasted Tomato and Chicken Pasta!


Grocery List:


2 pints of grape tomatoes
6 Chicken tenders
1 cup mushrooms, chopped
1/2 sweet onion, chopped
1 clove garlic, minced
1 cup of broccoli
4 tablespoons olive oil
1 box of bow tie pasta
1/3 cup of mozzarella cheese


What to do:


Preheat oven to 450

Bake chicken in oven (i put a little bit of olive oil and cream of mushroom in the pan)

Lay tomatoes on a baking sheet, drizzle with 2 tablespoons of olive oil and make sure each tomato gets oiled. Sprinkle with salt and pepper and roast for 20 minutes until tomatoes begin to burst.

After the tomatoes go into the oven, heat a skillet over medium heat and add remaining olive oil. Add onions and mushrooms and saute until soft, about 5-6 minutes. Then add broccoli for another 5 minuets.

Bring your water for your pasta to a boil and cook pasta according to directions.

Add garlic and spinach to the skillet, sauteing until garlic is wilted. Once tomatoes are done, add to veggie mixture. Drain cooked pasta and add it after the tomatoes.

Cut up chicken and add to mixture. Sprinkle with cheese and stir - the tomatoes and olive oil should create their own "sauce".

The past couple of weeks have been very hard..... with the loss of a best friend and the processes of finding a job.  I know deep down that God has a plan for everything, but I always have to find reassurance during a difficult time! I find this bible verse to be very helpful and I try to tell myself this everyday!!
Proverbs 16: 9 "We can make our plans, but the Lord determines our steps"
Just as he told us... we can make our plans, dream, set goals, and pray for the best...but I have quickly been reminded that although what we may think is "the best" idea may not be in the Lord's plan!! He is so amazing that he knows every step that we will take. I know that the Lord puts things in our paths ONLY to make us STRONGER...we wouldn't be the individuals we are unless we experienced pain and  misunderstanding... God uses things to only bring us closer to him!! So through all that I am experiencing I will continue to lean on his word!!
Also, one of Brittany's favorite bible verses gives me great strength...
Ecclesiastes 3: 1 "There is a time for everything, a season for every activity under heaven."
I pray for strength everyday!!

I will leave you with one last thought...that we should all remind ourselves of everyday!!!
Ecclesiastes 3: 12 "So I conclude that there is nothing better for people than to be happy and to enjoy themselves as long as they can."

  1. "We can make our plans, but the Lord determines our steps" Such true words and I love it! I may think my plans are the best...but He knows better and will slways do what is best for me. Trusting that is so hard sometimes but through faith we begin to realize and grow stronger in Him.

  3. The Lord will provide! Don't doubt that one bit! Just when I was about to give up hope with a job, I was hired at the last minute {four days before school started}. I had like 4 interviews for other schools before that, but it wasn't the school I wanted to work with. Now, I'm 2 minutes from work with the people I really love working with and are familiar with. Be patient!
